Discover the kidney bean

Kidney beans are a popular staple food in Ukraine, often used in hearty soups and stews such as borscht and chili. They have a mild, nutty flavor and a soft texture when cooked, and are a good source of protein, fiber, and other essential nutrients.

In Ukraine, kidney beans are often purchased dried and then soaked and cooked before use in recipes. They are also commonly used in vegetarian and vegan cooking as a meat substitute.

Boiled kidney bean with onions and carrots

Ingredients
  • 200 g of white beans
  • 3 spoon of oil
  • 1 medium carrot
  • 1 medium onion
  • salt and pepper to taste
Preparation
  • Take 200 g of white beans, cover with cold water and leave for at least 4 hours.
  • Then drain the water, rinse the beans, put them in a saucepan, cover with water, add a little salt and cook until done. After cooking, discard the beans in a colander.
  • Take 1 onion, peel and cut into medium cubes.
  • Peel one carrot and grate it on a large grater.
  • Heat a deep pan with 2 spoon of oil, fry the onion and carrot until the onion is transparent, and then add the beans. Salt and pepper to taste. But remember that you already salted the beans during cooking. Simmer all the ingredients together for a few minutes.
  • Beans with onions and carrots can be served hot or cold.
