Ukraine has a rich tradition of foraging for wild mushrooms, and various species can be found throughout the country's forests.

Ukrainians commonly use mushrooms in soups, stews, and other savory dishes for their rich, earthy flavor and meaty texture.

How to cook dried mushroom soup?

Ingredients
  • Potatoes 2 pcs.
  • Onion 1 pc.
  • Dried mushrooms 50 gr.
  • Carrot 1 pc.
  • Pearl groats ½ cup
  • Spices and Seasonings to taste
  • A small bunch of parsley
  • Garlic 1 clove
  • Salt to taste
  • Oil 1 spoon
Preparation
  • In order for the pearl barley to boil faster, we first soak it in water overnight. We drain the water from the groats, wash them, pour them into a saucepan and cook for 30-40 minutes.
  • Wash and clean potatoes and carrots. Cut the potatoes into small cubes, grate the carrots on a coarse grater.
  • Cut the onion into half rings, fry in oil until transparent. If desired, carrots can be fried together with onions.
  • Pour hot water over dried mushrooms, rinse, then pour water again and leave for 5-10 minutes.
  • Put potatoes, garlic, mushrooms, onions and carrots in a pot for pearl barley, add salt and spices. Cook over low heat until the potatoes are ready. Then add chopped parsley, bring to a boil and remove the pan from the stove. We serve the soup to the table with croutons and sour cream.
